Jalapeño Popper Stuffed, Bacon-Wrapped, Smoked Chicken Breast is a mouthwatering dish that combines bold flavors and textures. Tender chicken breasts are stuffed with a creamy mixture of jalapeño peppers, cream cheese, and shredded cheddar, then wrapped in crispy bacon. The chicken is slow-smoked to perfection, infusing it with a rich, smoky flavor, and ensuring the bacon is crisp while the filling stays deliciously gooey. This dish is perfect for BBQ lovers seeking a spicy, savory, and satisfying meal.

Instructions:
1. Preheat the Smoker. Preheat your smoker to 250°F (121°C). As an alternative you could use a conventional oven for this recipe but you lose the smoky flavor.

2. Prepare. Trim the chicken breast, dice jalapeño, soften the cream cheese and butterfly each chicken breast. Be careful not to cut all the way through the breast. In order to make this dish less spicy, be sure to scrape and remove the seeds before dicing the peppers.
3. Mix the Ingredients. In a bowl, mix the cream cheese, shredded cheese, diced jalapeños, Basic Blend and All-Purpose.

4. Stuff the Chicken. Stuff each breast with the cream cheese mixture and wrap each breast with two pieces of bacon, securing with toothpicks if necessary. We used our Grill Pinz. Once stuffed and wrapped, season with some more All-Purpose or your favorite bbq seasoning.

5. Smoke the Chicken. Place prepared chicken breasts in the smoker, preferably on a foil layer to protect from the melted cheese falling through the grates. Cook for 2 hours, or until the chicken reaches an internal temperature of 165°F (74°C) and the bacon is crispy. During the last 20 minutes, brush the chicken with your favorite BBQ sauce.
