Prepare to indulge in the ultimate prime rib experience! This recipe starts with a dry salt brine, infusing the beef with deep, savory flavor and ensuring an irresistibly tender bite. Roasted to perfection, the prime rib boasts a beautifully crusty exterior and a juicy, succulent center. A luscious compound butter, infused with fresh herbs, and garlic, melts gloriously over the hot roast, adding a decadent richness to every slice. Perfect for a holiday feast or special occasion, this prime rib is guaranteed to impress!
1. For this roast, we are using a dry salt brine for 24 hours before the cook. Prepare the roast by Frenching the bones for presentation. Save the excess meat and fat for a stew or ground meat. Salt the exterior of the roast and place on a roasting rack in the fridge for up to 24 hours prior to cooking. Remove the roast from the fridge and let it rest at room temperature for an hour before cooking.
2. Season the roast with our favorite rub. Use a TBSP of olive oil as a binder. If you don't have a favorite rub, we recommend our Oden's Kitchen Steak Seasoning or All-purpose blend. Allow the steak and rub to sit at room temperature for an hour.
3. Preheat the oven to 350 degrees F. Place the roast on a tray layered above sprigs of fresh herbs and garlic cloves.
4. Bake the roast at 350F to an internal temperature of 120F. Please use a meat thermometer to make sure you do not overcook. Estimate 12-15 minutes per lb.
5. Remove roast from oven and let rest for 30 minutes. While the roast is resting, prepare the compound butter.
6. Preheat oven to 475F. Cover roast with compound butter. Place roast back in oven for 10-15 minutes to develop a nice crust.
7. Remove from oven and let rest for a minimum of 20 minutes.
Rare: 120-125 degrees F. Red interior. Pink at the outermost edges.
Medium Rare: 130-135 degrees F. Mostly pink with a deeper red center.
Medium: 135-140 degrees F. Pink colored interior. Slightly brown towards edges.
Well-done: 145 degrees F+ Brown, no pink.
Slice and top with horseradish cream sauce.
Served with Sautéed green beans, roasted potatoes and carrots! This meal was absolutely delicious. Enjoy!

1 cup beef broth
2 TBSP red wine
1 TBSP Worcestershire sauce
1 tsp Basic Blend
Roast:
Three Bone Rib Roast (Roughly 8 lbs.)
1 TBSP Olive Oil
2 TBSP Oden’s Kitchen Steak Seasoning or All-Purpose Blend
A couple sprigs of thyme (for under the roast rack)
A couple sprigs of rosemary (for under the roast rack)
7-8 Garlic Cloves (for under the roast rack)
