Baked Ground Beef Flautas

Baked Ground Beef Flautas are a delicious and healthier alternative to the traditional fried flautas. Packed with flavorful seasoned ground beef, these crispy delights are baked to perfection, making them a guilt-free indulgence for your taste buds. Whether you're looking for a savory appetizer, a crowd-pleasing snack, or a satisfying main dish, these Baked Ground Beef Flautas are sure to hit the spot.




Instructions:


1. Prepare the Savory Ground Beef Filling:

  • In a large cast iron skillet over medium-high heat, add the ground beef. Break it into small pieces with a spatula and cook until it's browned and no longer pink.

  • Season the beef with Oden's Kitchen All-Purpose and chili powder. Stir well to evenly coat the meat.


  • Drain any excess grease from the beef, leaving just a small amount for flavor.

  • Add the diced onion to the pan. Sauté for about 2-3 minutes until the onions become translucent. Season with Oden's Kitchen Basic Blend.



  • Add onion to beef and cook for another 2-3 minutes to allow all the flavor to meld with the beef. Remove the skillet from the heat and let it cool for a few minutes.

2. Preheat and Prepare the Oven:

  • Preheat your oven to 400°F (204°C). Line a baking sheet with parchment paper or lightly grease a pyrex dish.

3. Assemble the Flautas:

  • Warm the flour tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds. This makes them more pliable for rolling.

  • Place a portion of the beef mixture (2-3 ounces) in the center of each tortilla and top with a sprinkle of shredded cheese and corn (optional). We used left over corn on the cob.



  • Roll up the tortilla tightly.

  • Lightly brush the flautas with extra virgin olive oil and sprinkle with cotija cheese.



4. Bake to Crispy Perfection:

  • Place the assembled flautas on the prepared baking sheet, seam side down.

  • Bake in the preheated oven for 15 minutes or until the flautas are golden brown and crispy.


5. Serve and Enjoy:

  • Remove the Baked Ground Beef Flautas from the oven and let them cool slightly.

  • Serve them with your choice of dipping sauces, such as salsa, guacamole, or sour cream, for a delightful and healthier twist on this classic dish.

2 lbs 80/20 ground beef

1 diced white onion

1 cup corn

1-2 cups shredded cheese (Mexican blend)

2 tbsp Oden's Kitchen All-Purpose Rub

1 tbsp Oden's Kitchen Basic Blend

1 tsp chili powder

2 tbsp extra virgin olive oil

16 soft taco size flour tortillas

Cotija cheese crumbles to taste
