This recipe transforms a classic chili into a vibrant, flavorful dish with the unique kick of Oden's Kitchen Kickin' Tacos seasoning. The addition of zucchini adds a delightful freshness and texture, while the ground turkey keeps it lean and satisfying. INSTRUCTIONS
Brown the Turkey:
Heat the EVOO in a large pot or Dutch oven over medium-high heat.
Add the ground turkey and cook, breaking it apart with a spoon, until browned.
Sprinkle 1.5-2 tablespoons of Oden's Kitchen Kickin' Tacos seasoning over the browned turkey and stir to combine. Cook for an additional minute, allowing the spices to bloom.
Sauté the Vegetables:
In a separate pot, cook the chopped onion and diced green bell pepper. Cook until softened, about 5 minutes.
Add the sliced zucchini, and sprinkle the remaining 1/2 tablespoon of the Oden's Kitchen Kickin' Tacos seasoning over the vegetables, stir to combine, and cook for an additional 3 minutes.
Add the Liquids and Tomatoes:
Stir in the tomato paste, beef broth, salsa, crushed tomatoes, and chopped green chile peppers into the ground turkey.
Bring the mixture to a simmer, then reduce heat to low.
Add the Vegetables.
Add the sauteed onions, green bell peppers and zucchini into the ground beef mixture.
Simmer:
Cover and simmer for about 20 minutes, or up to 30 minutes, stirring occasionally, to allow the flavors to meld and the chili to thicken.
Serve:
Ladle the chili into bowls.
Garnish with chopped green onions, a dollop of sour cream, and shredded Cheddar cheese.

3 tablespoons extra virgin olive oil (EVOO)
1 ½ pounds ground turkey (93/7)
2 tablespoons Oden's Kitchen Kickin' Tacos seasoning (for the turkey)
½ tablespoon Oden's Kitchen Kickin' Tacos seasoning (for the vegetables)
1 tablespoon Basic Blend (for the chili) or to taste
1 (6 ounce) can tomato paste
1 (14.5 ounce) can beef broth
1 (7 ounce) can salsa
1 (14.5 ounce) can crushed tomatoes, or coarsely chopped tomatoes packed in puree
1 (7 ounce) can chopped green chile peppers
1 medium onion, finely chopped
1 green bell pepper, diced
3 medium zucchini, halved lengthwise and sliced
1 bunch green onions, chopped (for garnish)
1 cup sour cream (for garnish)
1 cup shredded Cheddar cheese (for garnish)
TIPS/VARIATIONS
For a spicier chili, add more Kickin' Tacos seasoning to taste.
You can substitute ground beef or chicken for the ground turkey.
Add a can of drained and rinsed black beans, kidney beans, or pinto beans, for a heartier chili.
For a thicker chili, simmer uncovered for the last 10 minutes of cooking.
Serve with cornbread, tortilla chips, or your favorite chili toppings.
