Kickin' Chicken

Instructions:


1. Preheat the Grill. Preheat your outdoor flat top grill to medium heat, around 350°F (176°C). Make sure the surface is clean and lightly oiled to prevent sticking. A cast iron pan, gas or charcoal grill would work just fine.


2. Prepare the chicken thighs. Carefully remove any excess fat. Pat the chicken thighs dry with paper towels to remove excess moisture. This helps the seasoning stick better and promotes even browning.


3. Season the chicken. Rub your favorite taco seasoning, preferably our Kickin' Tacos seasoning, all over the thighs. Be sure to coat evenly on all sides.



4. Marinate the chicken. This step is optional but enhances the flavor so much! Once the chicken is seasoned, marinate in our carne asada mixture. Place in a covered bowl in the fridge for 30 minutes to 1 hour prior to cooking.


5. Grill the chicken. Place the seasoned chicken thighs on the preheated grill. Let them cook for about 6-8 minutes, or until the chicken begins to brown and get crispy. Carefully flip the chicken thighs using tongs. Grill for an additional 6-8 minutes on the other side, or until the internal temperature reaches 165°F (75°C) and the juices run clear.





6. Check for doneness. If you're unsure whether the chicken is fully cooked, use a meat thermometer to check the internal temperature. Insert the thermometer into the thickest part of the thigh.


7. Rest. Once the chicken thighs are done, transfer them to a clean plate and let them rest for a few minutes. This allows the juices to redistribute, resulting in juicier chicken.

8. Serve. Serve the grilled chicken thighs hot, garnished with your favorite toppings such as chopped cilantro, diced tomatoes, sliced avocado and lime wedges. They're perfect for tacos, salads, or simply enjoyed on their own!

2 Tbsp Kickin' Tacos Seasoning

2 Tbsp olive oil


Carne Asada Marinade:


1/4 cup olive oil

1/4 lime juice

1/4 cup Tamari or low sodium soy sauce
