Chimichurri is a vibrant and zesty sauce that hails from Argentina. It's the perfect accompaniment to steak, but it also pairs well with lamb, pork chops, roasted chicken, shrimp and vegetables. This recipe will guide you through making a classic chimichurri sauce that bursts with fresh flavors and adds a delightful kick to your meal.



Instructions:

1. Prepare the Fresh Herbs:

  • Start by washing and drying the fresh herbs – parsley and oregano. Removing excess moisture will help your chimichurri sauce have the right consistency.

2. Chop the Herbs:

  • Finely chop the fresh parsley and oregano. If you're using dried oregano, you can skip this step for now.

3. Mince the Garlic:

  • Peel and finely mince the garlic cloves. You can also use a garlic press for this step to get a finer texture.

4. Combine Ingredients:

  • In a mixing bowl, combine the chopped parsley, minced garlic, and oregano. If using dried oregano, add now.

5. Add the Liquids:

  • Pour in the extra-virgin olive oil and red wine vinegar. These liquids will bring a delightful acidity to the sauce.

6. Season:

  • Sprinkle in the red pepper flakes, salt, and freshly ground black pepper. You can adjust the quantities of red pepper flakes and salt to your preferred level of spiciness and saltiness.

7. Mix Well:

  • Use a spoon or a whisk to thoroughly mix all the ingredients together. Ensure that the herbs are evenly distributed throughout the sauce.

8. Taste and Adjust:

  • Taste your chimichurri sauce and adjust the seasoning as needed. You can add more vinegar, red pepper flakes, or salt to suit your taste.

9. Let It Rest:

  • To allow the flavors to meld and develop, cover the chimichurri sauce and let it sit at room temperature for at least 30 minutes. You can also refrigerate it for a few hours or overnight for even better results.

10. Serve:

  • Chimichurri is best served fresh and at room temperature. Drizzle it over grilled meats, roasted vegetables, or use it as a marinade. It's a versatile sauce that adds a burst of flavor to a wide range of dishes.

1 cup fresh chopped Parsley

3-4 Minced garlic cloves

2 Tbsp fresh chopped Oregano (or 2 tsp dried oregano)

1/3 cup Olive oil

2 Tbsp Red wine vinegar

1 tsp Sea salt

1 tsp Black pepper

1/2 tsp Red pepper flakes

You can add even more red pepper to spice it up a bit!
