Smoked baked beans are a delicious twist on a classic comfort food. This recipe combines tender baked beans with white onions, red bell pepper and jalapeño creating a flavorful base. Instructions:
1. Preheat the Smoker. Preheat your smoker to 250°F (121°C). As an alternative you could use a conventional oven for this recipe but you lose the smoky flavor.
2. Prepare the Ingredients. Chop the onion, bell pepper, jalapeño and pineapple. Cut the bacon into 1/2 inch squares.
3. Cook the Bacon. In a cast iron skillet, cook the bacon over medium heat until it is crispy. Remove the bacon and set aside.
4. Mix the Ingredients. In a foil tray, combine the vegetables, chopped pineapple, 2 cans of baked beans, cooked bacon, Oden's Kitchen KC BBQ Sauce (or your preferred BBQ sauce), and Dancin' Ribs seasoning. Mix well to ensure all ingredients are evenly distributed.
5. Smoke the Beans. Place the tray(s) (I like to use two trays double stacked for durability) in the preheated smoker. Smoke the beans at 250°F for 2.5 to 3 hours, stirring occasionally to ensure even cooking and absorption of the smoky flavor.
6. Check and Serve. After 2.5 to 3 hours, check the beans for doneness. They should be bubbly and slightly caramelized on top. Remove from the smoker and let cool slightly before serving.
7. Enjoy. Serve your smoked baked beans as a savory side dish at your next barbecue or family gathering.

8-10 slices bacon cut into 1/2 in squares
